My New Favorite Spice – Herbes de Provence

It’s true. I have a new favorite spice. This in no way, shape or form means that I have abandoned black pepper. No way. Black pepper is a part of me — mainly because I have consumed so much of it over the years.

However, this new spice in my pantry has been the MVP of many recent dinners. Allow me to introduce you. Friends, meet Herbes de Provence. Herbes de Provence, meet friends.


I first met Herbes de Provence two years ago at Friendsgiving. What is Friendsgiving? Thanksgiving with friends. It’s one of my most favorite holidays…where you celebrate with those friends that are like family. Anyway, the only spice used to jazz up the turkey that year was Herbes de Provence and even though our hosts were turkey-cooking novices, they would have fooled Julia Child.

I wish we had smell-o-monitors. It’s where the real magic of this spice is.

Herbes de Provence is a generic term used to describe herbs found in France’s Provence region. These include herbs such as marjoram, oregano, thyme and rosemary, among others. In very, un-Provence style, the American version of this spice includes a little bit of lavender. I don’t know who decided that it should have lavender, but it is worth it! Talk about wonderfully aromatic and delicious!


I’m not entirely sure what the McCormick company includes in their version of this spice, but whatever it is, keep up the good work guys!

So, how do you use it? I’m so glad you asked! I’ve sprinkled it on chicken breasts before baking them. I’ve sprinkled it on pork chops before pan frying them. I’ve also sprinkled it on the outside of my bread when making grilled cheese…oh, that was delicious! “Sprinkling” appears to be the theme here!

I’d definitely use it to flavor a turkey again because not only does the turkey taste amazing, but the gravy made from the drippings is out-of-this-world!

So, there you have it. A happy little new-to-me discovery that has made an otherwise ho-hum dinner night pretty impressive!
