If only those Girl Scout cookies weren’t SO good.
It would make it much easier to say “no” to the little girls coming around our neighborhood selling those hard-to-resist creations. In case you’re a Girl Scout with cookies and treats to sell, I haven’t said no yet!
By the way, I’ve been extremely impressed thus far with how articulate and composed these young girls have been. Even at 6 and 7 years old they are demonstrating impressive poise and responsibility.

The ingredient list for this recipe is simple: eggs, sugar, cream, half & half, cookies and some sort of mint flavoring.
I think next time I would add a little more flavoring and extra cookies just to make the flavor really burst off the charts. Oh, and you know there will be a next time…because we already ate all of this batch!
It’s hard to imagine buying ice cream from the store ever again. We’ve had so much fun experimenting with various ice cream recipes and have so many more we are excited to try! Oh and by “we,” I mean my husband. I’m not allowed near his new toy.
Spoiler alert: we’ve already made ice cream with another Girl Scout cookie: Samoas! That was pure happiness on a spoon. Here’s the recipe if you want to try it:
Homemade Girl Scout Cookie Thin Mint Ice Cream
Ingredients
2 large eggs
3/4 cup sugar
2 cups heavy or whipping cream
1 cup half & half
2.5 TBSP peppermint schnapps (or 2 tsp of mint extract)
2/3 cup Girl Scout Think Mint cookie chunks (or more depending on your preference)
Directions
Mix ingredients (except cookies) according to directions provided by your ice cream machine. Add cookies into the mixture once the ice cream has started to thicken and prior to the end of your machine’s mixing cycle (approximately 2 – 3 minutes before mixing is complete).
Use 2 tsp mint extract or if you don’t have extract on hand, you can use 2.5 or 3 TBSP of peppermint schnapps.
Wait for your ice cream machine to finish working it’s magic. Garnish with an additional cookie. Serve and enjoy! Makes approximately 1.5 quarts.
